Rosemary, Kalamata & Feta Baked Chicken

Day 1 of our Mediterranean Lifestyle meal: 
So while our honey's were playing some video games and hanging out last night, Holly and I went to the grocery store and purchased almost everything on the Mediterranean Diet/Lifestyle list. We couldn't find a recipe that sounded appropriate for the night, so we improvised. Here is a recipe we put together ourselves!


ROSEMARY, KALAMATA & FETA BAKED CHICKEN

  • 6 Chicken Breast Fillets
  • 2 Roma Tomatoes
  • 10 Kalamata Olives and some Juice
  • 200g of Crumbled Greek Feta cheese
  • 2 Cloves of freshly minced Garlic
  • 2 tbsp. of smart balance butter
  • 2 sprigs of fresh Rosemary
  • 1 sprig of fresh Oregano
  • 1 tbsp of Herbs de Provence



In a bowl, mix together the minced garlic, rosemary, oregano and melted butter. Place chicken in a glass dish in a single layer. Cover with the butter mixture and allow to marinate for 30 minutes to 1 hour.


Preheat oven to 350F.


Sprinkle the herbs de Provence and some Kalamata olives and its juice over the chicken and bake for 20 minutes


Top with the tomatoes and feta and bake for another 20-25 minutes or until the chicken is cooked and the feta starts to turn golden.
